What makes the magic?
Temperature Control & Accuracy.
The system previously incorporated a high-end thermal controller ( microprocessor ) which did a fine job of monitoring
and fine tuning recirculating wort within very close tolerances. Now, Sabco has gone one better by upgrading the device with
a sophisticated new graphic operator panel and PLC (programmable Logic Controller). Pilot System operators, pubs and
advanced small batch brewers continually seek best methodologies to assure consistent, and repeatable high quality.
Temperature , mash environment, wort handling characteristics, timing and ingredients certainly play significant roles in the
outcome of any recipe. The ability of a brewer to control such variables using acquired skills, as well as technical assistance,
is oftentimes rewarded with ‘expected’ or desired product results. Dedicated computer programs have been developed to assist
brewers in writing the script for the ‘actors’ to play out . What’s different about Sabco’s latest controller is its unique
programming which can actually record and play back mechanical actions of a brewing session in exacting order and time. In
short, it doesn’t simply display what a brewer wants to do, but in fact also records and can play back what the brewer actually
did during critical mash control periods. The controller maintains amazingly perfect mash temperature throughout the mash
period. Brew-Magic has been scientifically tested and proven to produce uniform temperature stability with virtually zero percent
stratification ( layering ) of heat within the mash kettle.
No Caramelizing Effects.
When wort comes into contact with a heated surface, special care must typically be taken so that scorching does not
occur. This wort damage can cause unwanted burnt flavorings in the finish beer. Brew-Magic eliminates caramelization by
keeping the wort moving past heated surfaces at all times. The flow rate across heated surfaces protects against such damage.
Brew-Magic keg style kettles with their rounded bottoms uniformly pull liquid to centrally located siphons for recirculation. Hot
spots are eliminated and stirring the mash is not performed during mash operations allowing recirculation to bring the wort to
the grain rather than grain to the wort . Testing has proven that ‘hot-side’ aeration is nonexistent with the Brew-Magic design.
Superb Wort and Mash Bed Handling.
Brewers making small batches have a tendency to over-stir the mash to be sure that air pockets are eliminated and that
an even distribution of heat is occurring within the mash kettle. Stirring creates several variables that may alter : 1) starch
conversion, 2) static filter bed integrity, 3) clarity of the runoff, 4) grain husk integrity, 5) yield efficiency. It’s easy to accidentally
modify a small batch recipe by stirring the mash bed. Brew-Magic has eliminated these problems by eliminating the need to stir
the grain. This system moves only the wort from underneath the false bottom of the mash kettle and returns it with an adjusted
temperature back to the top of the mash kettle in a unique whirlpool fashion which exhibits none of the typical RIMS design
characteristics of frothing or foaming, or showering. All of which create additional unwanted variables. The grain bed is
undisturbed and remains a perfect static filter. The grain is ‘spent’ thoroughly and gently while surrounding temperature is
perfectly maintained. Because the integrity of the mash bed is stabilized throughout the conversion process, the mash does a
marvelous job of clarifying the recirculating wort to produce the clearest runoffs one could possibly imagine. Brew-Magic is truly
a ‘System’ that works.
